Ingredients
- 200 g grated Deliart Mahon cured cheese
- 200 g rice flour – Keeps them crisp and gluten-free
- 100 g butter – Cold and cubed
- 1 egg

- 80 g black olives, chopped – Or green olives, if you prefer
- 1 pinch of salt
- Mix of seeds – For sprinkling on top

Instructions
- Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a large bowl, mix the rice flour, grated cheese, oregano, and a pinch of salt.

- Add the cold butter and rub it into the dry ingredients with your fingertips until it resembles coarse crumbs.
- Stir in the chopped olives and crack in the egg. Mix everything together until you get a smooth dough. If the dough feels too dry, add a teaspoon of cold water at a time.
- Roll the dough out between two sheets of parchment paper to about ½ cm thickness. Use cookie cutters or a knife to shape your crackers.
- Place them on the baking tray, sprinkle mix of seeds on top, and press them in lightly.

- Bake for 15–20 minutes, or until golden and crisp around the edges.
- Let them cool completely before serving – they’ll continue to crisp up as they cool.
