Gluten Free Cheese Crackers with Olives & Herbs

Ingredients

  • 200 g grated Deliart Mahon cured cheese
  • 200 g rice flour – Keeps them crisp and gluten-free
  • 100 g butter – Cold and cubed
  • 1 egg
  • 1 tbsp dried oregano – For that Mediterranean touch
  • 80 g black olives, chopped – Or green olives, if you prefer
  • 1 pinch of salt
  • Mix of seeds – For sprinkling on top

Instructions

  1. Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a large bowl, mix the rice flour, grated cheese, oregano, and a pinch of salt.

  1. Add the cold butter and rub it into the dry ingredients with your fingertips until it resembles coarse crumbs.
  1. Stir in the chopped olives and crack in the egg. Mix everything together until you get a smooth dough. If the dough feels too dry, add a teaspoon of cold water at a time.
  2. Roll the dough out between two sheets of parchment paper to about ½ cm thickness. Use cookie cutters or a knife to shape your crackers.
  3. Place them on the baking tray, sprinkle mix of seeds on top, and press them in lightly.

  1. Bake for 15–20 minutes, or until golden and crisp around the edges.
  2. Let them cool completely before serving – they’ll continue to crisp up as they cool.

Mahon cheese (Queso Mahón) is a traditional cheese from the island of Menorca in Spain’s Balearic Islands. The curado (cured) version is aged for several months, giving it a firm texture and a sharp, nutty flavor with buttery undertones. Its bold character makes it ideal for grating into recipes like these savory crackers. Bonus: aged cheeses like Mahón curado are often naturally low in lactose, making them suitable for those with lactose intolerance.
