The goats have to graze in the field; which is a differentiating element of this product and contributes to animal welfare. Furthermore, these activities contribute to support and develop the rural areas of Spain.
Some of the pure goat cheeses are endorsed by the Denominations of Origin such as Murcia al Vino (DO) cheese, as well as some Andalusian and Canary Island cheeses. In this case, goat roll cheese (goat roll cheese matured with mold) does not have a Denomination of Origin and is made with pasteurized goat’s milk.
Unique characteristics of goat milk
The process of the pasteurized goat’s milk guarantees the elimination of bacteria and microorganisms. It is a cheese with almost no curing.
